Multi-award winning Indian chef, Anand George, has returned after four months away from the Welsh culinary scene launching his first pop-up restaurant concept – Poppupadom.

The Tiffin Cup winning founder of Mint & Mustard, named the South Wales Echo Restaurant of the year, has joined forces with Spiros, the Cardiff based fine dining catering company

which operates throughout South Wales to mount the project.

Wales’ first Poppupadom pop-up restaurant will be held at The GlassHouse lounge and bar in Sovereign Quay, Cardiff Bay on 14th July, when Anand George will create a four-course

fine dining experience for one night only.

Anand George said: “Pop-up restaurants are currently a huge hit in London and other cities where people enjoy the excitement of a nomadic eatery which is here today and gone tomorrow. Teaming up with Spiros, who cater for all sorts of events has given me the infrastructure I need to literally take my restaurant on the road and create a fine-dining experience which I hope people will love.”

The symbol of Poppupadom is a butterfly, representing a colourful experience which flits from venue to venue. True to its transient nature, Poppupadom events will be announced using social networking platforms including Twitter and Facebook.

Spiro Borg whose company has recently diversified into location catering for the TV industry said: “We are hugely excited to be collaborating with Anand George who is a great chef, tI believe we have a culinary dream team which draws on the strengths of all involved. The newly opened GlassHouse is a perfect venue for our debut and we are looking forward to creating a great restaurant experience for our guests.”

Later in the year Anand George will be bringing Poppupadom to the Abergavenny Food Festival creating a two-day pop-restaurant in partnership with Spiros.

Gavin Alexander, owner of the GlassHouse, a members’ venue which also hosts weddings and corporate events said: “It is fabulous that the GlassHouse has been chosen for the Premiere of Poppupadom, I am sure the eyes of the UK culinary scene will be on us on the 14th July. We hope that the debut will go well and would love to host a Poppupadom restaurant again in the near future.”

Dinner with a Difference

Over 50 guests attended a dinner with a difference at Spiros Fine Dining venue in Roath at the end of March. The difference was that the dinner was cooked and served by 8 youngsters from St.Mellons aged between 13 and 15.

Chef Spiro had trained his protegees over four two hour sessions in food hygiene, preparation and service to enable them to prepare and serve a three course meal to Rotarians and distinguished guests including the Deputy Lord Mayor, Councillor Dianne Rees and Councillor Freda Salway.

Congratulating the young team on an excellent meal and superb service, the President of Cardiff St.Davids Rotary Club, Dr.Arthur Knight, wished them well for the future.

Thanking Spiro for his tireless efforts in running the training programme for a fourth year, Dr.Knight presented Spiro with the highest Rotary honour, a Paul Harris fellowship.

One of the trainees, Chanelle, said that the experience had been well worth while and that she hoped to start working in the Industry later this year.

A couple brought together over the Internet thanks to their love for Marmite, commemorated the match-making effect of the famous spread by celebrating it at their wedding reception on Friday 13th.

Michelle Scott, 29, from Cardiff and fiancé Peter Griffin, 35, from Hertfordshire met on Match.com and instantly struck up a bond thanks to their passion for the yeast extract, which they eat at least twice a day.

Four years later the couple married at St Donat’s Arts Centre in the Vale of Glamorgan, Wales, with the opinion-splitting spread taking centre stage, with bread and marmite on the menu, a his and hers cake in the shape of the famous black and yellow jar and marmite spread gifts for all guests.
Spiros, the creators of the Marmite Wedding Cake and freshly baked Marmite infused bread said:

“This will definitely be a wedding cake you’ll love or hate! Savoury wedding cakes are becoming more popular, specifically those made of cheese, but we have never had such a challenge as this. I am sure the marmite cake will divide guests down the middle, but just to be safe we do have a small sweet wedding cake for people who cannot stand Marmite!”

Bride Michelle Scott, who is an interior designer said: “We both absolutely love marmite and eat it at least twice a day. When we were planning the wedding we wanted to bring our love of marmite to our special day and even became part of the Marmarati which spreads the love of marmite around the world. I even tried to find a marmite style carriage to arrive in on our big day.

In construction, the cake is made of sponge with a layer of Marmite spread on the inside and covered with icing to look like the famous jar. The bread was freshly made and has a hint of the yeast extract to give it that added zest.

Spiro Borg added: “Times are changing when it comes to weddings and many people do not want the traditional tiered wedding cake, they want a themed cake which symbolises their union or interests. I am not too sure if the Marmite cake will ever be repeated in my lifetime though!”

Every year Spiros caters for the Captain Scott Society, recreating the dinner which the great explorer and his men enjoyed on June 13th, 1910 at the Royal Hotel, Cardiff, before leaving for the Antarctic. This year was no exception and they are honoured to be involved in catering for such an historic event.

In addition, we co-organised the Royal Hotel Captain Scott Centenary Dinner on Friday June 11th, serving up a 9-course Edwardian banquet again re-creating the famous 1910 dinner in the Captain Scott Room of the Royal Hotel.

This was a massive event, raising funds for Cardiff Institute for the Blind and co-sponsored by Castell Howell Foods and co-organised by Blanket Communications.

We were delighted that John Evans, grandson of the great Petty Officer Evans, was able to join us as a special guest. John’s grandfather conquered the Pole with Scott only to perish along with his four comrades on the return journey, and he also addressed the 1910 dinner hosted by Cardiff Chamber of Commerce.

We organised for John to speak the very words his grandfather spoke, which made for an emotional occasion, and he was filmed by Australian TV as well!
David Wilson, great nephew of Doctor Edward Wilson was also a guest of honour and we were thrilled to be able to mount such a meaningful event for the relatives and of course, our many guests!

Paul Gardner of Thomas, Carroll Group plc, the 112th President of Cardiff Chamber also delivered the same speech as his equivalent in 1910 Mr Trevor Jones.

We raised nearly £1,000 for the Institute for the Blind and look forward to continuing our close working links with the fascinating world of Captain Scott and historic catering in general.

Read the article on Wales on Line – about the exciting discovery of a flag, given by the scouts of Cardiff to Captain Scott 100 years ago, which survived fires and floods but was re-united with Petty Officer Evans’s grandson – John Evans.

It’s with great sadness that Spiro will no longer be cooking at the school from next term.
CFTB and Kings Monkton have decided to take their catering back in house.
We are very proud of what has been achieved at the school and we leave them with a Silver Standard Award from Environmental Health.
We wish them all the best, and we will miss you.
